




In his former profession as a policemanfor 25 years, his role was "to protect and serve", at times literally. Prior to retiring from the Cranford Police Dept., he took those words very seriously, now he focuses on the latter part of that oath, "to serve." Paul learned from his Ukranian Grandma the finer aspects of the food of his forefathers from soup to nuts. From picking the apples for Grandma's apple piesto helping her grind horse radishes for family meals, of course everything had to be from scratch and only the freshest ingredients would do.
His cooking was a staple in the CPD and along the way he joined "Les Marmitons", a distinguished French Canadian men's cooking club. When an article appeared in the Star Ledger about the group they were soon contacted by Connie Collins from Al Roker Productions, and they were included in the premier episode of ROKER ON THE ROAD on the Food Network.
Paul has made himself at home in many of the kitchens of the various restaurants in the Cranford area. Sometimes lending a hand but always taking mental notes and learning from the chefs he calls his friends, thankfully always bringing home his newly-gained knowledge for his lucky wife and family to try out. Since his retirement he concentrates more on designing gourmet kitchens for his clients but he is never far from the stove.
